Mac & Wild Scottish Cocktails, established in 2015 by the team behind Fitzrovia’s newcomer restaurant, Mac & Wild, is set to be the drink everyone is talking about this season. Mac & Wild Scottish Cocktails are hand crafted small batch cocktails using Scotland’s finest whiskies and spirits married together with complimentary flavours from the wild. Under the watchful eye of mixologist Luke Leiper, the cocktail recipes are carefully curated and inspired by Scotland’s wild but beautiful landscape.
The range comprises of The Forager, Tam’s Tears, Bonnie Brae, Ginger Laddie and Auld Pal. Each expression is based on a classic style of cocktail that is easily identifiable such as a Manhattan or Old Fashioned. However this is just a guide for the imbiber as each creation is an original cocktail.
The spirits and vermouths are macerated (or infused) in with locally sourced scottish herbs and botanicals until the right flavour balance is achieved. Just like with a good whisky the process is never rushed, with each cocktail taking a varying length of time to reach maturity.
Once ready they are then wax sealed, labelled and the batch number is signed on each bottle.
We sampled Bonnie Brae which is an expertly blended cocktail using Haig Club Scotch Whisky, Rowan Berries, Rhubarb, Rosato Vermouth, Peychauds and Agave based on a Spritz style drink. The nostalgic flavours transported us to the heart of the Scottish Highlands.
