How to Serve the Perfect Cup of Green Tea
Mark Donovan, Tetley Master Blender says, “Green tea should be drunk at 80 degrees to get the maximum taste benefit. If you don’t have a temperature controlled kettle, either bring the water to the boil and leave for 30 seconds, or wait until the kettle just starts to bubble. Or as they say in China, ‘watch for the dragon’s eyes awakening’: this looks like a consistent stream of bubbles but not a full boil. Leave for 3-4 minutes to give time for the flavour and vitamins to infuse the water. While the tea is brewing, warm your cups or mugs in the same way you did your teapot. In my opinion tea tastes best from a bone china mug!”
Green tea facts
Green tea has been used in traditional Chinese medicine for centuries to treat a wide range of medical problems. Green tea naturally contains B vitamins, folate (naturally occurring folic acid), manganese, potassium, magnesium, caffeine and other antioxidants, notably catechins. Green tea is hydrating and contains no calories (when made from a tea bag or loose leaves). It also contains less caffeine than coffee and black tea. Green tea is said anecdotally to have a range of health benefits, including boosting the metabolism (and therefore aiding weight-loss), reducing cholesterol, combating cardiovascular disease, and preventing Alzheimer’s disease.
